Combine Ingredients:Combine the sugar and water in a small saucepan. Heat and Dissolve:Heat the saucepan over medium heat, stirring occasionally, until the sugar completely dissolves and the mixture just comes to a gentle simmer. Steep Lavender:Remove the pan from heat. Add the dried culinary lavender buds, and stir gently. Let the mixture steep for 20 minutes to infuse the lavender flavor. Strain:Strain the syrup through a fine-mesh sieve into a clean jar or bottle. Allow it to drain naturally without pressing on the lavender buds, so the syrup stays clear and not cloudy. Cool and Store:Let the syrup cool to room temperature. Store in a sealed jar or bottle. Lavender syrup stays fresh in the refrigerator for up to two weeks.
Always use culinary-grade lavender. Non-culinary lavender can be treated with pesticides and isn’t safe for cooking.
For stronger flavor, slightly increase the amount of lavender buds rather than steeping longer, which can cause the syrup to become bitter.
Store your syrup in the refrigerator in an airtight container clearly labeled with the date. Discard after 2 weeks or if it appears cloudy or smells off.
